A taste of home.

I was really wanting a Sunday lunch like my mama used to make. Roast chicken, peas and carrots and cream potatos. Mmmmmmmmm. So yummy! We made it for lunch today and it was so good - even Finley enjoyed it! I love that she is old enough now to eat what we are eating....in small, tiny pieces of course :) She ate a good amount, though most of it ended up in the chair (underneath her bottom). Nothing like some crushed peas and chicken stuck to her pants when we were done haha!

Homemade Bagels

Mmmmm....it sounded so good when I read it on The Pioneer Woman's Blog . Warm, freshly baked bagels - in lots of different flavors. Seriously, I had to try and make them! I mean, how hard could they be? Truthfully - they were not hard to make at all. Not even very time consuming! I was surprised at how quick, easy and tasty these homemade bagels turned out to be :) If you would like the recipe, then just click HERE and try them for yourself!

Bread

I made fasolakia today. It's a greek dish, consisting of beans, beef and potatoes - cooked in a garlic, tomato and onion mixture. Really delicious. Trust me! You may be wondering why my picture isn't of the so-called Fasolakia. Well that would be because it was so good that it all got eaten before I could snap a shot. However, my good friend April posted a bread recipe on her baking blog this week, and it also looked delicious. So I thought, why not? Let's pair the two deliciousnesses together (I just made up a word, didn't I?) and have Fasolakia and homemade bread. The bread turned out pretty good, not exactly PERFECT, but very tasty nonetheless. It was a little too dense for my liking. You'll notice that April's bread looks much nicer than mine does - much taller and fluffier. I think part of the problem was that mine didn't rise properly. My house is a little too cold apparantly. I had to warm my oven up and stick the bowl of bread dough in there for it ...

Mmmmm......... seriously........ is there anything better than the smell of fresh baked bread rolls? It makes my house smell so good - and believe me, they don't stay like this for very long LOL. A few seconds after I put my camera down I pried apart these little puppies and let's just say that they taste even better than they look! Mmmmm...... gotta love freshly baked bread! Seriously!

Easter

Easter was really laid back this year - and I liked it! It all started at about 8am on Saturday, when I decided I was going to tackle a new recipe that I'd found on The Pioneer Woman's website a few days back - Hot Cross Buns. With my sous chef by my side (my helpful husband haha!) I made these DELICIOUS treats! Take a look! Don't they look scrumptious? They seriously were! Kind of like a warm cinnamon roll, but a little more bread-like. SO YUMMY! If you want to try this out for yourself, check out the recipe HERE. Later that day we had our family (the Skinners) come by for "Linner" (kind of a late lunch/early dinner) - thanks Brandon, for our great roast chicken meal! Before we ate though, I gave everyone a dyed egg for our traditional Greek Easter egg cracking :) As usual, Jem had the only remaining uncracked egg. What Is It Wednesdays!

Another great What Is It Wednesday? meal, courtesy of Christy Barnett (who made it first, and brought it to Stamp Club to share with the girls!). Thanks for the recipe Christy! It was super easy and quick to make....and my husband (who says that Mexican food is his NUMBER ONE FAVORITE haha) loved it! I've included the recipe below, in case you want to try it out :) RECIPE for SPICY MEXICAN TORTE: Ingredients: 1/2 pound chorizo ground sausage, 1 large onion (chopped), 2 cloves garlic (finely chopped), 1 can (4 oz) green chilies (drained), 1 can (16oz) refried beans, 1 jar of roasted red bell peppers (or 2 red bell peppers if you roast them yourself), 2 cups Monterey Jack cheese, & 8 flour tortillas. Method: Cook sausage, onions and garlic in a skillet over medium heat. Drain, stir in chilies, and set aside. Heat oven to 400 degrees F. Grease a pie plate, and place 2 torillas in the bottom. Spread half the sausage mixture on top, sprinkle half the cheese, then top with 2 t...

What Is It Wednesdays!

Here are a couple more dishes from my "What Is It Wednesdays". Up above we have yesterday's suprise dinner - a Potato & Onion Frittata with a Ceaser Salad, and for dessert a Chocolate Caramel Cake. Sooooo yummy!!! Last week we had a Chicken Noodle Casserole (I substituted the 'tuna' in the recipe for 'chicken' since tuna makes me ill haha! Turned out pretty good - it had an amazing bechemel sauce that was delish!

I love Wednesdays! That's the day I try a new recipe -- and in our house, we call this "What is it? Wednesday!". Jem and Brandon both look forward to seeing what new meal I've made - and I think it's helped expand my son's somewhat picky palate! A friend suggested that I take a photo of my finished meal...and I couldn't believe that I've not done this yet LOL (what with my love of blogging AND taking photos!). So here is my first "What is it? Wednesday" recipe -- our meal today, Cashew Chicken. Step-by-Step 1. Toss 2 lbs chicken breast (pre-cut into 1" cubes) into a bowl with 2tsp fresh minced/juicy ginger, 2tbsp dry sherry & 1-1/2 tsp cornstach. Season with salt & marinate in the fridge. 2. In another bowl mix 1/2 cup chicken broth, 2 tbsp soy sauce, 2 tsp sugar, 1 tbsp rice vinegar and 2 tsp cornstarch. Set aside. 3.
