What Is It Wednesdays!

Another great What Is It Wednesday? meal, courtesy of Christy Barnett (who made it first, and brought it to Stamp Club to share with the girls!). Thanks for the recipe Christy! It was super easy and quick to make....and my husband (who says that Mexican food is his NUMBER ONE FAVORITE haha) loved it! I've included the recipe below, in case you want to try it out :) RECIPE for SPICY MEXICAN TORTE: Ingredients: 1/2 pound chorizo ground sausage, 1 large onion (chopped), 2 cloves garlic (finely chopped), 1 can (4 oz) green chilies (drained), 1 can (16oz) refried beans, 1 jar of roasted red bell peppers (or 2 red bell peppers if you roast them yourself), 2 cups Monterey Jack cheese, & 8 flour tortillas. Method: Cook sausage, onions and garlic in a skillet over medium heat. Drain, stir in chilies, and set aside. Heat oven to 400 degrees F. Grease a pie plate, and place 2 torillas in the bottom. Spread half the sausage mixture on top, sprinkle half the cheese, then top with 2 t...

Here are some photos of my little Jem (though with the speed that he is outgrowing his jeans, I can hardly call him little anymore *sigh*). They were taken on his actual birthday, out on my porch...and yes, this is me playing around with my editing program, Photoshop Elements...fun, isn't it? P.S. Thought it would be fun to post the "before" shots of these pictures....what they actually looked like right out of my camera! Before any lightening, cropping & adding of fun backgrounds.....so here they are :) What a difference, right? Before - dull shots of a fun occassion. After - some pop! and wow!

President's Parade

Okay, so I know I'm a little "late"....updating this blog, I mean. Better late than never though, right? Here is a picture of Jem during his President's Parade at school. He was assigned President William Taft, and his beautiful wife is Mrs Helen Taft (aka best friend, Heather). They were absolutely ADORABLE together....and I even managed to capture a little video of Jem saying his two 'interesting' facts. Unfortunately my video cut out before I could get Mrs Taft's facts also :( But trust me, she was adorable too!

Jem's 8th Birthday

Jem's 8th Birthday was so much fun - though it took quite a bit of effort to execute! He had a "Mario" theme this year...and was involved in planning every part of it with me :) See, he loves the game "Paper Mario - the thousand year door". So of course, that's the kind of party he wanted. And it was up to me to make it happen. Not as easy as you'd think. We bought a few Mario themed items...water bottles as party favors, a pinata to fill with candy, plates and balloons....but all of the games I had to make myself. From the 3 hours I spent drawing and painting an exact "hooktail" for the 'pin the tail on hooktail' game; to the laborious task of cutting a 'boo' out of foam board; to the stinky and staining job of boiling eggs and painting green spots of them for the 'Yoshi's egg relay race' - we really put a LOT of effort into this party! We were so glad Jem's friends were able to share the day with him....thanks ...
