What Is It Wednesdays!
Another great What Is It Wednesday? meal, courtesy of Christy Barnett (who made it first, and brought it to Stamp Club to share with the girls!). Thanks for the recipe Christy! It was super easy and quick to make....and my husband (who says that Mexican food is his NUMBER ONE FAVORITE haha) loved it! I've included the recipe below, in case you want to try it out :)
RECIPE for SPICY MEXICAN TORTE:
Ingredients: 1/2 pound chorizo ground sausage, 1 large onion (chopped), 2 cloves garlic (finely chopped), 1 can (4 oz) green chilies (drained), 1 can (16oz) refried beans, 1 jar of roasted red bell peppers (or 2 red bell peppers if you roast them yourself), 2 cups Monterey Jack cheese, & 8 flour tortillas.
Method: Cook sausage, onions and garlic in a skillet over medium heat. Drain, stir in chilies, and set aside. Heat oven to 400 degrees F. Grease a pie plate, and place 2 torillas in the bottom. Spread half the sausage mixture on top, sprinkle half the cheese, then top with 2 tortillas. Sprad refried beans on top, then top with 2 tortillas. Spread the roasted bell peppers, then top with 2 tortillas. Sprad reamaining sausage mixture and sprinkle the rest of the cheese on top. Cover, and bake for 40 minutes. Allow to cool for 10 minutes before serving with Sour Cream and Salsa! Enjoy!
