Random Pictures

Here are a couple of very random pictures LOL. They were taken on a rare sunny winter's day....when I decided to go up into Jem's room (which is the only room in the house to get the morning sun) and sit and read for a bit. While I was up there I decided to take a photo of Jem's books...which were piled up nice and neatly on his chest of drawers. These books were a gift for Christmas, and he absolutely LOVES them - you will find him in bed every night, with his booklight clipped to one of these books, reading them over and over again :) The sight of them in his room just reminds me of him :) And of course I am never alone in this house, even when all of my people are gone :) My companion, Snickers, is always by my side. On this day she found herself a nice spot in the warm sunshine - right on Jem's chair! She looked so cute and sweet that (of course!) I had to snap her picture :) I love my little snickerdoodles!

What Is It Wednesdays!

Here are a couple more dishes from my "What Is It Wednesdays". Up above we have yesterday's suprise dinner - a Potato & Onion Frittata with a Ceaser Salad, and for dessert a Chocolate Caramel Cake. Sooooo yummy!!! Last week we had a Chicken Noodle Casserole (I substituted the 'tuna' in the recipe for 'chicken' since tuna makes me ill haha! Turned out pretty good - it had an amazing bechemel sauce that was delish!

I love Wednesdays! That's the day I try a new recipe -- and in our house, we call this "What is it? Wednesday!". Jem and Brandon both look forward to seeing what new meal I've made - and I think it's helped expand my son's somewhat picky palate! A friend suggested that I take a photo of my finished meal...and I couldn't believe that I've not done this yet LOL (what with my love of blogging AND taking photos!). So here is my first "What is it? Wednesday" recipe -- our meal today, Cashew Chicken. Step-by-Step 1. Toss 2 lbs chicken breast (pre-cut into 1" cubes) into a bowl with 2tsp fresh minced/juicy ginger, 2tbsp dry sherry & 1-1/2 tsp cornstach. Season with salt & marinate in the fridge. 2. In another bowl mix 1/2 cup chicken broth, 2 tbsp soy sauce, 2 tsp sugar, 1 tbsp rice vinegar and 2 tsp cornstarch. Set aside. 3. New Years Trip

We went on a 2 day trip to Leavenworth over the New Years weekend. We travelled with our neighbors and good friends, The Fatlands....and had a great time! Thankfully the driving conditions over the pass weren't too bad, and we had no need for chains :) Once we got to Leavenworth there was snow EVERYWHERE - it was absolutely BEAUTIFUL! It was lots of fun being in this little Bavarian town all lit up with lights at night....and it was fun to experience Tube City (although it was a little TOO scary for me to try more than a handful of times haha!). Can't wait to go back :) Thanks for making it such a fun trip Carson, Kate and DJ!
